This week we talked with Bombay Bistro chef Jiten Singh. With over 20 years experience in the kitchen at restaurants around India, Chef Jiten’s previous roles include executive chef at popular restaurants Olive in Bombay and Café Amour in Delhi. Chef Jiten is currently managing the delicious menu creations at Bombay Bistro, a restaurant and bar at Found 158 serving up a contemporary interpretation of Indian classics.
Can you tell me about the dish you are helping us prepare this week?
I will teach my simple and delicious mango lassi, a quintessential Indian drink with a smooth taste that balances out the Indian spices.

What five ingredients do we need?
1 medium-size fresh mango
1 cup unsweetened non-fat yogurt
½ cup milk
2 tablespoons brown sugar
Dash of ground cardamom or cinnamon
What is the five-step recipe?
1. Peel the mango and cut into cubes.
2. In a blender, puree the diced mango with ground cardamom or cinnamon. You can also add a dash of rosewater or a pinch of saffron to create a more complex flavor.
3. Add yogurt and milk to the blender.
4. Blend with ice cubes for a few seconds until the contents are smooth and creamy in consistency.
5. Pour into a tall glass and garnish with additional ground cardamom or cinnamon.

What’s your advice on your dish of the week?
The type and ripeness of your mango will affect the flavor of your lassi. Certain mangoes will result in a sour taste, usually the riper the mango, the sweeter the lassi. You can also experiment with other ingredients to add depth of flavor. For example, add pistachios for a nuttier flavor, or mint leaves for a fresh and refreshing aftertaste.
