However, it's in the Imperial Chamber that the restaurant's most impressive elements lie. As the showroom for Chinese Executive Chef Chan Kowk's traditionally rooted, Shanghai-updated Cantonese masterpieces, this is a high-end experience that pairs exclusive fine dining elements and private dining settings with expert culinary craftsmanship. Providing the flourish that ties this superior offering all together is the expertise of the hotel's in-house tea sommelier, and Jerry Liao, China's pre-eminent wine sommelier. The highly accredited Liao is the mastermind behind one of the most extensive wine programs in the city and works in step with Chef Chan to take the restaurant's sophisticated flavors and harmonize them with a deeper culinary dimension that can only be provided by great wine.
